Coconut oil (saturated fat) is the best cooking oil because it tolerates higher temperatures and is a healthy.  Reflect on your assumption that saturated fat is the bad stuff.  Read Dr. Mercola's article "The truth about saturated fat" (3 parts) and become informed.  Remember to choose certified organic and non GMO coconut oil made from fresh coconuts to reduce your exposure to chemical processing.

Olive oil (monosaturated) is excellent when it is not heated.

Do not use polyunsaturated fats including corn, canola, safflower, and soy because they contain trans-fatty acids which have been implicated in other diseases.
